Saveur’s Osso Buco

I’ve never made osso buco (or braised veal shanks), so I wanted to try my hand at this recipe.  It’s one of those that take a long time, but most of it is idle time.  So one of these days, when you have the day off and are looking for a good homemade dinner, I would definitely recommend this one.

First, start with some good quality meat…

then brown the meat.

While the meat’s browning, prepare your mise en place as above.  Take your meat off the heat and cook the chopped veggies in the same pot.

After the veggies are nice and soft, add back the meat, some herbs and white wine and bring to a simmer.

 

 

Bring to a simmer and then cover and stick the whole thing in the oven for 1 1/2 to 2 hours until the meat is falling off the bones. Then take the meat out, reduce the liquid by half, put the meat back in the liquid and top with garnish.  Enjoy!
